6-1A - proper cold holding temperatures
Observed multiple TCS food items cold held above 41F in the prep top cooler and reach in cooler. Manager was advised to place ice under the items in the prep top cooler and to replace the gaskets on the reach in coolers that are the cause of the temperature increase.

Observed mold like substances on interior surface of ice machine. Observed food/lip contact surface of coffee mugs stored on trays with debris.

Observed reach in cooler gaskets not properly closing. It was observed that when one door closes, the other pops opened. Manager was advised to repair the door gaskets.

Observed white substances on the walk in cooler shelves. Observed syrup spilled in the cabinets underneath the soda machine with mold growth. Manager was advised to clean and sanitize these surfaces.

Observed floors underneath the dish machine, cooking equipment, walk-in cooler, and dry storage area with food debris. Observed ceiling tiles with dust accumulation.

Regulation: 511-6-1.07(5)(d) - cleaning ventilation system, nuisance & discharge prohibition, cleaned in way not to cause contamination or create a public health hazard (c)
Observed dust accumulating on air vents.
