Observed raw shrimp and raw chicken stored together next to produce and above containers of RTE sauces. Manager was advised on how to properly store raw and RTE food items.

12A - contamination prevented during food preparation, storage, display

Observed fish batter stored uncovered next to the fryers. Manager covered the container of batter with a lid. Observed container of food oil on the floor underneath the wok stove and boxes of food stored on the floor of the walk in freezer. Manager and team member corrected on site by placing items 6 inches above the floors.

Observed raw fish being prepped in the vegetable prep sink. Team member corrected on site and was advised to clean and sanitize the vegetable sink.
12B - personal cleanliness
Regulation: 511-6-1.03(5)(j) - hair restraints (c)
Observed manager working front desk and also assisting with food prep without proper hair restraints. Manager was advised to restrain hair with a hairnet or a hat to prevent hair from contaminating food.
12C - wiping cloths: properly used and stored
Regulation: 511-6-1.04(4)(m) - wiping cloths, use limitation (c)
Observed wiping cloths stored in chlorine sanitizer of 0ppm. Manager corrected on site and made new sanitizer solution at 100ppm.
