6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed rear reach in cooler with sliced tomato and cheese at 45 degrees F and reach in cooler drawer cooler with egg and ham at 44 degrees and 45 degrees respectively. C/A - move food for working coolers and have units serviced. COS - manager had food moved to working coolers.

Observed cheese and butter at 52 degrees F in walk in cooler and ambient walk in cooler temp at 50 degrees F. C/A - move all TCS food just delivered to walk in freezer ASAP and have cooler serviced. COS - manager had TCS food moved to freezer immediately.
6-1D - time as a public health control: procedures and records
Regulation: 511-6-1.04(6)(i) - time as a public health control (tphc) (p, pf, c)
Observed times missing on prep line. C/A - place times on food being held for time control as soon as the TCS food is taken from temperature control. COS - manager had time stickers printed and placed.
