6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed three TCS foods (Raw beef roast, raw pork chops & raw ground beef in exterior WIC that were being held above 41 degrees. The ambient thermometer indicated 45 degrees F and the probe thermometer (Therma pen) indicated 44 degrees F. CA: Turn down thermostat of WIC to maintain foods being held equal to or below 41 degrees.
18 - insects, rodents, and animals not present
Regulation: 511-6-1.07(5)(k) - controlling pests (pf, c)
Observed back door to kitchen propped open and flies moving in/out of kitchen. The blower unit above door was not activated. Inspector checked unit operation and confirmed it was working but not in use. CA: Improve indoor environment which would alleviate the desire for staff to open back door to lower heat in kitchen area. Put the overhead blower unit on a proximity/motion sensor switch so it operates anytime back door is opened. No COS.
14A - in-use utensils: properly stored
Regulation: 511-6-1.04(4)(k) - in-use utensils, between-use storage (c)
Observed knives and mixing spoons left out unprotected. A used knife was on counter beside back door. A used mixing spoon was on counter leading to back food prep room. CA: Keep in use utensils protected or covered when not in active use. No COS.
15C - nonfood-contact surfaces clean
Regulation: 511-6-1.05(7)(a)2,3 - equipment, food/nonfood-contact surfaces, and utensils, food-contact surfaces of cooking equipment & nonfood-contact surfaces free of accumulations (c)
Observed built up food debris and grease on ventilation hood filters, the upright oven, fryer sides and back and floors beneath equipment. CA: Clean noted areas and maintain a cleaning schedule that will prevent buildup of food/grease/cooking fumes. No COS.
17D - adequate ventilation and lighting; designated areas used
Regulation: 511-6-1.07(3)(f) - lighting intensity, adequate in food prep, storage & service areas (c)
Observed inadequate lighting in exterior WIC to distinguish food types and condition. CA: Replace or add lighting to exterior WIC so that a person entering can easily determine condition of items being stored there and observe the thermometer mounted on the refer unit. Inspector observed rotting lettuce in cardboard box at rear of WIC. No COS
