Bulk ice machine interior chute observed build up unit needs to be taken down/shut off and properly cleaned and sanitized. Machine does have clean in place system. Clean within 72 hours.

Observed employee wipe down food prep counter top and then start making a drink without properly washing hands prior to changing task. From working with chemicals then back to working with food products staff must wash their hands. When Discussed with PIC she corrected staff and made employee wash hands.

Observed packaged box caring hot dogs where staff had slashed into the box and the bag of bulk hot dogs at the same time. Package integrity of hot dogs has been compromised. When Discussed and showed PIC she immediately discarded box of hot dogs.

Improper cooking times of Hamburger patties was observed in chute/ line 2 of the flame broiler. Temps were observed at 142, 138,146. Discussed cooking parameters with staff and she adjusted the temp time for hamburger patties-- Recooked- 178, 184, 186 were observed.

Pitted and stained cutting board was observed on the pretzel / hot dog food prep stand. Cutting board at this time needs to be replaced if cannot be cleaned of stains.

Proper date marking queso cheese dip, lettuce, onions, were items observed without being date marked and some dated items you could not read the label as to what the date was. RTE, TCS Food items held over 24 hrs need to have proper date marking and labels.

Food containers need to be labeled when removed from original container. Observed salt, and sauces in multiple bottles not properly identifying contents of the bottle. Label contents within bottles

Utensils and food equipment needs to be stored 6 inches off the floor... observed several boxes sitting directly on floor in main kitchen-- food warmer, cup dispenser and more.
Stand up Fry Cold hold unit bottom shelve/ plating seals on cold hold units were observed with food build up and debri. Items need to be cleaned more frequently to avoid accumulation

Food contact surface - bulk ice machine was observed with heavy mold build up on interior ice chute. Staff called company (who was just recently out to clean machine) to come back out to redo all again.

Sealed sanitizer bottle not being stored properly below food items, observed sitting above covered bacon onion rings beside a cook unit. All chemicals should be stored away/below food product. CFSM removed chemicals from area.
