4-2A - food stored covered

Biscuits in the reach in unit by the fry freezer stored uncovered. CA: All food shall be stored covered to prevent overhead contamination. COS: Covered during inspection.
4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(6)(n) - manual and mechanical warewashing equipment, chemical sanitization-temperature, ph, concentration, hardness (p,pf)
Sanitizer that is being used to wash off the dining table is for non-food contact surfaces only per the chemical info sheet. CA: A chemical sanitizer used in a sanitizing solution for a manual or mechanical operation at contact times specified under subsection (8)(b)3. of this Rule shall meet the requirements specified in DPH Rule 511-6-1-.07(6)(g), shall be used in accordance with the Environmental Protection Agency (EPA)-registered label use instruction. COS: Management is going to start using it for touch points only (door handles, seats, etc.) and going to use a sanitizer that is for food contact for the dining tables. Tables that have been wiped off with the non-food contact surface cleaner will be re-cleaned.
