Observed multiple TCS food items being held above 41F in combination pass thru cooler between main kitchen and serving line. When being cold held, time/temperature control for safety food shall be maintained at 41°F (5°C) or below. COS: PIC discarded of food items that had been kept in the cooler for any extended time. Prepackaged cut watermelons and prepackaged cut fruits that arrived less than an hour prior were moved to walk in cooler and cooled to 41F. PIC placed a work order for the cooler.
