Temp Control For Safety foods (cut fruit - Bananas) observed in RIC at 45- 50F with date labels of 1/19 and 1/21. Keep TCS foods at 41F or less. Out of temp bananas disposed. Cos.
14A - in-use utensils: properly stored
Regulation: 511-6-1.04(4)(k) - in-use utensils, between-use storage (c)
Observed in use food scoops for prep top cooler on front line stored in cool water. Ned to store clean and dry, in dipper well, in food being served with handle out of contact with food, or in hot (135F) water. Utensils removed to pot sink for cleaning and proposed for storage in existing dipper well.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
Observed accumulations of dust, debris and/or food particles on floors under equipment, along baseboards and on restroom vent fan. Clean surfaces at a frequency to prevent cooling.
