Observed improper active (open seal, 1/2 full drink (protein shake) stored in beverage area cooler. Staff drinks that are active/in use must be in a single service container with a lid and straw if in a food service area. Shake disposed.

Observed chef knife stored between grill prep top cooler and prep table. Store knives on clean surface, in food being prepared with handle up, in hot (135F) water, or in active dipper well. COS

Observed clean stacks of dish, bowls stored upright and uncovered on ventilated shelving racks. Store clean dishes covered or inverted. COS.

Observed accumulations of dust/debris on WIC fan grills. Observed debris on floor of WIC. Clean surfaces at a frequency to prevent accumulations.
