Observed employee prepare raw meat, and then put on gloves and start preparing ready to eat food without washing hands. CA:PIC must ensure food employees know when to wash hands COS: Gloves were removed and discarded food employee properly washed hands and donned new gloves.

Observed birria and el pastor from previous day that was not date marked and held more than 24hrs (BASE OF OPERATIONS) Observed made salsas that did not bear a date mark that were prepared the previous day(MOBILE) CA: PIC must ensure ready to eat TCS foods are date marked according to earliest preparation date COS:Items were discarded
12C - wiping cloths: properly used and stored
Regulation: 511-6-1.04(4)(m) - wiping cloths, use limitation (c)
Observed wet wiping cloths not stored in sanitizer between uses. PIC must ensure wet clothes are stored properly
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
Observed leak in ceiling inside mobile unit PIC must ensure unit is in good repair
