observed Cooked Time/Temperature Control for Safety Food (birria/beef) not cooled from 135F to 41F within 6 hours. Owner advised pot was removed from heat at 6 am and was 50 degrees at 3pm CA: PIC must ensure proper cooling occurs COS: Birria was bagged in trashbag and put into trash can

Observed hand wash sink in food cooking area that does have hot and cold water under pressure. CA:. A handwashing sink shall be equipped to provide tempered water at a temperature of at least 85ºF (29.4 ºC) through a mixing valve or combination faucet. Pf
