Regulation: 511-6-1.04(4)(m) - wiping cloths, use limitation (c)
Observed wet sanitizer cloth stored on counter by prep-top unit and pizza making station in main kitchen.
CA: Cloths in-use for wiping counters and other equipment surfaces shall be held between uses in a chemical sanitizer solution at a concentration specified by manufacturer.
COS: Employee removed cloth and placed with dirty linen.
14B - utensils, equipment and linens: properly stored, dried, handled
Regulation: 511-6-1.05(10)(a) - equipment & utensils, air-drying required (c)
Observed multiple metal containers wet stacked by 3 compartment sink in main kitchen.
CA: After cleaning and sanitizing, equipment and utensil shall be air-dried or used after adequate draining before contact with food.
COS: Employee removed from drying rack to have them, re- washed, rinsed and sanitized.
17B - garbage/refuse properly disposed; facilities maintained
Observed dumpster with both doors left open. CA:Receptacles and waste handling units for refuse, recyclables, and returnables shall be kept covered with tight-fitting lids or doors if kept outside the food service establishment.
COS: Employee closed dumpster door.
