2-1C - no bare hand contact with ready-to-eat foods or approved alternate method properly followed
Regulation: 511-6-1.04(4)(a)1,2,3,4(i) - preventing contamination from hands (p), (pf), (c)
Observed food service employee touch breadsticks after they came out of the oven with their bare hands to remove from pan. CA: PIC must ensure there is no bare hand contact with ready to eat foods COS: food was discarded
1-2B - certified food protection manager
Observed no ServSafe certificate posted in public view nor able to be provided at the time of inspection. CA: The original certificate shall be posted in public view, and an additional copy may be on file at facility at all times. Health dept to check back - 30 days to comply - obtain certificate.
6-2 - proper date marking and disposition
Observed container of wings not date marked in WIC in main kitchen area. CA: TCS foods held in a facility for more than 24 hours shall be clearly marked to indicate the date or day by which the food shall be used or discarded. COS: PIC discarded the food items.
