6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed two separate containers of milk and ambient temperature on bar cooler nest to coffee machine at 54 degrees F for cold holding. C/A - repair cooler so that it holds at or below 41 degrees F for cold TCS items even in opening and closing door constantly. COS - manager moved milk to working cooler.

Observed food stored on counter being held at 63 degrees F (Cut Lettuce) and 54 degrees F (Sliced Tomatoes) being held at room temperature. C/A - store all TCS food in coolers that can cold hold below 41 degrees F. COS - manager had food moved to cooler.
4-2A - food stored covered
Regulation: 511-6-1.04(4)(c)1(iv) - packaged & unpackaged food, food stored covered(c)
Observed food stored on counter and in steam well left uncovered. C/A - cover all food while storing. COS - manager covered food.
4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(7)(a)1 - equipment, food-contact surfaces,& utensils (pf)
Observed knives only being cleaned once per day. C/A - food prep utensils should be cleaned and sanitized every four hours. COS - kitchen manager clean and sanitized knives.
4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(8)(b) - hot water and chemical-methods(p)
Observed black build up in ice machine. C/A - clean more frequently to prevent build up. COS - manager had food surface of ice machine cleaned.
8-2B - toxic substances properly identified, stored, used
Regulation: 511-6-1.07(6)(b) - working containers, common name (pf)
Observed unlabeled buckets being reused for sanitizer without being relabeled. C/A - ALWAYS relabel container when reusing them, especially when using old food containers to hold sanitizer. COS - manager labeled sanitizer buckets.
