Cold-Holding was assessed and incompliance unless noted in the temperature log. Hot-Holding was assessed and incompliance unless note in the temperature log. Gave the following to PIC; 1. vegetable sink sign 2. 2026 permit Fees will be charged accordingly for any violation which cannot be corrected on-site during inspection. 12D: .04(4)(g)At the beginning of the inspection, observed waitress using the vegetable sink to make two chlorine sanitizer spray bottles. Waitress was near the end of the task during observation. Raw fruits and vegetables shall be thoroughly washed in water, in a sink designated for that purpose only, to remove soil and other contaminants before being cut, combined with other ingredients, cooked, served, or offered for human consumption in ready-to-eat form. (Pf) Corrective Actions: PIC was coached on where to make sanitizer spray bottles. PIC (person in charge) was given a vegetable sink sign.

15C: .05(7)(a)2,3Observed the bottom of the reach-in-cooler located across the cashier station containing debris. Observed the shelf and the bottom reach-in-cooler located by the hot holding steamer containing debris. Nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and other debris. (C) Corrective Actions: PIC had food employee clean both reach-in-coolers.
