Observed several chemicals stored next to and above dishes inside the food truck. CA: Poisonous or toxic materials must be stored so they cannot contaminate food, equipment, utensils, linens, or single-service items. Chemicals must be separated and may not be stored above these items. COS: Chemicals were relocated to a designated area away from dishes during the inspection.

Observed no test strips available to measure the concentration of quaternary ammonium sanitizer used for sanitizing food contact surfaces. CA: A test kit or other device capable of accurately measuring the concentration of sanitizing solutions must be provided and available to ensure sanitizer is maintained at the proper strength for effective sanitization. COS: PIC instructed to obtain quaternary ammonium test strips and ensure sanitizer concentration is routinely verified.
