Observed time/temperature control for safety food (chicken wings and pasta) being cooled by a non-approved method. Pasta was covered in a pan that was deeper than 2 inches before reaching 41 degrees in walk-in cooler. Wings were covered in the walk-in cooler before reaching 41 degrees. COS: Wings were uncovered and pasta was moved to reach-in freezer and uncovered to finish cooling process. CA: Ensure pasta is 41 degrees F or below in ice bath prior to placing in deep container. Also, leave wings uncovered until cooling process is complete.

Gravy was not cooled down to 41 degrees F after cooking before placing on prep-top cooler. Ensure employees are trained to use a thermometer to check temperatures when cooling foods to ensure reached 41 degrees before placing in deep container and covering or placing on prep-top cooler.
