Regulation: 511-6-1.05(6)(n) - manual and mechanical warewashing equipment, chemical sanitization-temperature, ph, concentration, hardness (p,pf)
Sanitizer bucket registering at 0 ppm quat. Advised PIC to dump out and refill bucket with sanitizer registering between 200-400 ppm quat. Sanitizer in sani-buckets shall register between 200-400 ppm quat.
14B - utensils, equipment and linens: properly stored, dried, handled
Regulation: 511-6-1.05(10)(a) - equipment & utensils, air-drying required (c)
Clean pans staked wet. Advised PIC to air dry prior to stacking.
