Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Observed dish machine at 0ppm chlorine. Person in charge added chlorine to dish machine and rested at 50ppm. Corrected On-Site Repeat Violation Admin Complaint

High Priority - Food-contact surfaces not sanitized after cleaning, before use. Do not use equipment/utensils not properly sanitized. Observed dishes ran through dish machine without any sanitizer installed. Person in charge installed sanitizer and reran dishes. Corrected On-Site

Observed food employees place two dirty dishes in dish washer with gloves on, then attempt to start making food at flip-top cooler without changing gloves and washing hands. Immediately discussed with food employees and they washed hands and changed gloves. Corrective Action Taken
