High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed chicken (54F - Cold Holding) in flip-top table top reach in cooler. Person in charge voluntarily disposed of without answering questions. Observed red sauce on counter (55F - Cold Holding). Discussed time as a public health control with person in charge. Added time label of 11 on red sauce. Repeat Violation Admin Complaint

Intermediate - Commercially processed ready-to-eat, time/temperature control for safety food opened and held more than 24 hours not properly date marked after opening. Observed cream and house made sauce from Saturday per person in charge not date marked.

Intermediate - No written procedures available for use of time as a public health control to hold time/temperature control for safety food. Person in charge had time label on whole pizza. No written procedures. Provided copy to person in charge and discussed.
