Observed employee drinking a canned beverage in the kitchen. CA: Employee personal drinks shall be in a single-use cup with lid and straw and stored to prevent contamination. COS: Can was discarded.
6-2 - proper date marking and disposition
Regulation: 511-6-1.04(6)(g) - ready-to-eat time/temperature control for safety food, date marking (pf)
Observed opened gallons of milk bearing no date mark label. PIC stated the opened milks were there when he arrived in the morning and unknown when they were opened. CA: Refrigerated, ready-to-eat TCS foods prepared and packaged by a food processing plant shall be clearly marked with an expiration date not to exceed 7 days if it is not used within 24 hours after opening. COS: PIC discarded milks.
14A - in-use utensils: properly stored

Observed scoops stored in bulk containers of dry goods with the handle stored in direct contact with the food. CA: Utensils stored in containers of food in between use shall be stored with their handles above the food within the containers.
