Observed cooler with ambient internal temperature above 41F. COS all TCS foods moved to another cooler. Do not use cooler for TCS items until repaired and inspected by the health authority.

Observed foods not properly cooled before storage/service. Cooling is a two step process. From cooking temperature to 70F within two hours at room temp, then place in cooler uncovered and cool from 70F to 41F within an additional two hours before tightly covering and storing or setting out for service. When working with uncooked or previously cooled items like cooked ham, pasta, or produce, cooling is just one step from 70F to 41F in 4 hours.
COS pic moved items to wic in thin layer to speed up cooling.
