Observed in the RIC #2 in the main kitchen a container of raw been stored above raw fish and a container of raw fish stored above cooked collard greens. Raw and ready-to-eat TCS foods shall be stored according to final internal cooking temperature. COS: PIC reorganized RIC #2 in the main kitchen for proper storage hierarchy.

Upon arrival, observed the current and original CFSM not posted in public view. The original CFSM certificate shall be posted in public view in each food service establishment. An additional copy shall be retained on file at the food service establishment at all times, and shall be made available for inspection by the Health Authority. Place the original CFSM certificate in public view.
