6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed multiple TCS food items cold holding at PTC, unit turned off. Advised PIC that when cold holding TCS foods shall be at 41 degrees F or below. COS: Had PIC turn cooler unit on to initiate proper cooling.
2-2B - proper eating, tasting, drinking, or tobacco use
Regulation: 511-6-1.03(5)(k)1&2 - eating, drinking, or using tobacco (c)
Observed food employee chewing gum while prepping salad. Advised PIC employees shall consume food only in approved designated areas separate from food preparation and serving areas, equipment or utensil areas and food storage areas. However, drinking from a single service beverage cup with a secure lid and straw that is handled to prevent contamination of the employee’s hands, the container, exposed food, clean equipment, utensils and linens, unwrapped single-service and single-use articles will be allowed. COS: Had food employee cease eating at prep area.
4-2B - food-contact surfaces: cleaned & sanitized

Observed multiple cups at bar area stored as clean with food debris. Advised PIC equipment food-contact surfaces and utensils shall be clean to sight and touch. Advised PIC to wash, rinse, and sanitize cups.
13A - posted: permit/inspection/choking poster/handwashing
Regulation: 511-6-1.02(1)(f)(1) - permit, displayed (c)
Upon arrival, observed Provisional Permit posted and expired. Advised PIC that a provisional permit expires within 60 days of issuance date. Advised PIC to obtain the permanent permit of the facility and post in public view.
14A - in-use utensils: properly stored
Regulation: 511-6-1.04(4)(k) - in-use utensils, between-use storage (c)
Observed in RIF at the cookline, a bowl used as a scoop without a handle. Advised PIC during pauses in food preparation or dispensing, food preparation and dispensing utensils shall be stored in the food with their handles above the top of the food and the container. Advised PIC to obtain scoop with handle.
15A - food and nonfood-contact surfaces cleanable, properly designed, constructed, and used
Regulation: 511-6-1.05(6)(a) - good repair & proper adjustment (c)
Observed prep-top cooler turned off holding TCS foods. Advised PIC equipment shall be maintained in a state of repair. COS: Had PIC turn on unit.
15C - nonfood-contact surfaces clean
Regulation: 511-6-1.05(7)(a)2,3 - equipment, food/nonfood-contact surfaces, and utensils, food-contact surfaces of cooking equipment & nonfood-contact surfaces free of accumulations (c)
Observed rusting on racks stored above 3-compartment sink and stains on rack storing clean utensils. Advised PIC nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and other debris.
