Observed interior food contact surface of ice machine panel with pink mold-like substance. Advised PIC equipment food-contact surfaces and utensils shall be cleaned: at a frequency specified by the manufacturer; or absent manufacturer specifications, at a frequency necessary to preclude accumulation of soil or mold.

Observed absorbent ceiling tiles throughout main kitchen area, warewash areas and food prep areas. Advised PIC indoor materials shall be nonabsorbent for areas subject to moisture such as food preparation areas, walk-in refrigerators, warewashing areas, toilet rooms, mobile food service unit servicing areas, and areas subject to flushing or spray cleaning methods.

Observed multiple single-service containers of prepped salad cooling tightly covered in the RIC. Advised PIC on proper cooling methods. COS: Employee removed lids form salads and placed salads in the WIC for proper cooling.

Observed active leak at the 3-compartment sink. Advised PIC that all plumbing systems shall be maintained in good repair. CA: Advised PIC to have 3-compartment sink repaired.

Observed food contact surfaces of multiple metal lids stored as clean in a plastic bin with old food debris. Advised PIC that all food contact surfaces shall be cleaned to sight and touch. COS: PIC moved lids to the 3-compartment sink for proper wash, rinse, and sanitize.

Observed sanitization concentration of the 3-compartment sink measuring at 500 ppm quat and actively being used to sanitize utensils. Advised PIC that when using quaternary ammonium as a sanitizing solution, the sanitization concentration shall range between 200-500 ppm Quat. COS: PIC diluted sanitization concentration to 300 ppm.
