Observed food employee while donning gloves adjust clothing and then proceed to handle tray of broccoli at front-food service with soiled gloves. Advised PIC If used, single-use gloves shall be used for only one task such as working with ready-to-eat food or with raw animal food, used for no other purpose, and discarded when damaged or soiled, or when interruptions occur in the operation. COS: Had food employee cease handling tray of broccoli, wash hands, and don new gloves.

Observed expired CFSM posted in public display with an expiration date of 12/9/24. Advised PIC a CFSM certificate which has expired, been revoked or suspended shall not be posted in the food service establishment. COS: Had PIC place current CFSM with expiration date of 11/18/29 in public display.

Observed milk inside of front-food service milk cooler above 41F. Advised PIC Time/Temperature Control for Safety Food, Hot and Cold Holding. Except during preparation, cooking, or cooling, or when time is used as the public health control, time/temperature control for safety food shall be maintained at 41°F (5°C) or below.

Observed employee wash-rinse-sanitize multiple utensils (spoon, scoop, scooter, spatula) move from dirty to clean dishes and store away without hand-washing step between handling clean dishes. Advised PIC Food employees shall clean their hands After handling soiled equipment or utensils. COS: Had employee replace all utensils put away as clean, to wash compartment for proper wash-rinse-sanitize with hand washing step in-between.

Observed PIC remove rack of mixed salad dish (1) from WIC, taking temperature of mixed salad dish, bare hand contact of carrot on mixed salad dish (1), observed no discard step after bare-hand contact with RTE food. Advised PIC Except when washing fruits and vegetables or as specified under subsection (a)4, food employees shall not contact exposed, ready-to-eat food with their bare hands and shall use suitable utensils such as deli tissue, spatulas, tongs, single-use gloves, or dispensing equipment. COS: Had PIC discard mixed salad dish (1).

Observed employee puck trach off the floor, place in trash car and did not wash hands. Advised PIC when changing tasks, employees shall wash hands. COS: employee washed hands
