Observed multiple food contact surfaces of utensils including knives, ladles, and hand mixers stored at the front-food service drawer underneath the grill as clean with excessive food debris. Advised PIC that food contact surfaces shall be cleaned to sight and touch. Advised PIC to wash, rinse, and sanitize, all utensils.

Observed food contact surfaces of the interior of the bulk ice machine in the main kitchen stored as clean with pink residue. Advised PIC that equipment food contact surfaces and utensils shall be cleaned at any time during the operation when contamination may have occurred. Advised PIC to thoroughly clean the interior of the bulk ice machine in the main kitchen area.

Observed PIC cooking at the cookline with a watch and bracelet. Advised PIC Except for a plain ring such as a wedding band food employees may not wear jewelry including medical information jewelry on their arms and hands while preparing food. COS: PIC removed watch and bracelet when cooking.
