6-1D - time as a public health control: procedures and records

observed facility using TPHC without procedures upon request. Advised PIC that when using Time as a Public Health Control (TPHC), written procedures shall be provided and kept on file at all times. Advised PIC to provide TPHC policy upon request from the Health Authority.
4-2B - food-contact surfaces: cleaned & sanitized

Observed food contact surfaces of the interior of the bulk ice machine in the main kitchen stores as clean holding ice with staining. Also observed food contact surfaces of the interior of the ice bin lid with black debris near the drive-thru window. Advised PIC that equipment food contact surfaces and utensils shall be cleaned at any time during the operation when contamination can occur. Advised PIC to increase the cleaning frequency of the bulk ice machine and ice bin lid.

Upon arrival, observed the 2026 Food Service permit not posted in public view. Advised PIC that a current Food Service permit shall be posted in public view at all times. Advised PIC to relocate 2026 Food Service permit.

Upon arrival, observed the most recent inspection report not posted at the drive-thru window and multiple pick-up windows. Advised PIC that the most recent inspection report shall be posted in public view at all times. Advised PIC to post the most recent inspection report at pick-up windows and the top 1/3 of the inspection report at the drive-thru window.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
Observed stains on ceiling tiles throughout the facility. Advised PIC all physical facilities shall be maintained in good repair.
17D - adequate ventilation and lighting; designated areas used
Regulation: 511-6-1.07(3)(f) - lighting intensity, adequate in food prep, storage & service areas (c)
Observed no lighting in the walk-in freezer in the main kitchen. Advised PIC light intensity shall be at least 10ft candles at a distance of 30 inches.
