Observed facility without food allergy awareness training. Advised PIC that food employees shall be properly trained of food safety, including allergy awareness. Advised to create/obtain food allergy awareness training and provide to the Health Authority upon request.
2-2D - adequate handwashing facilities supplied & accessible
Regulation: 511-6-1.06(2)(o) - using a handwashing sink- operation & maintenance (pf)
Observed mop and mop bucket stored directly in from of back hand sink. Advised PIC that hand sinks shall be maintained so they are easily accessible at all times. COS: Food employee removed mop and mop bucket from hand sink.
4-2A - food stored covered
Regulation: 511-6-1.04(4)(c)1(iv) - packaged & unpackaged food, food stored covered(c)
Observed in RIC 1 container of cut cabbage mix, 1 container of carrots, 1 container of broccoli, and 2 containers of cooked shrimp stored uncovered. Advised PIC that except when cooling food items shall be stored covered in order to protect from contamination. Advised PIC to place lids on al food items listed.

Observed prep top cooler in disrepair and not in use with an ambient temperature of 60 degrees F. Advised PIC ambient air temperature shall be maintained in good repair and be accurate within the intended range of use. Advised PIC to have unit serviced or replaced.

Observed absorbent ceiling tiles installed throughout the main kitchen are. Advised PIC that all ceiling tiles shall be made of material that is smooth, durable and easily cleanable at the food prep area. Advised PIC to replace absorbent ceiling tiles.
