6-1B - proper hot holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; hot holding (p)
Observed at the front food service steamtable veggie eggrolls and mango chicken hot holding in the temperature danger zone below 135F. Advised PIC that all TCS foods shall properly hot hold at 135 degrees F or above. Advised PIC to reheat mango chicken and veggie eggroll to 165.
16A - hot and cold water available; adequate pressure

Observed the vegetable prep sink with hot water turned off. Advised PIC that hot and cold water under pressure shall be available to all plumbing fixtures. Advised PIC to have the vegetable prep sink serviced.

Observed 2025 permit posted in public view. Advised PIC that a current Food Service Establishment shall be posted in public view at all times. Advised PIC to post 2026 permit in public view.
