Regulation: 511-6-1.04(4)(m) - wiping cloths, use limitation (c)
Observed wet wiping cloths stored on the counters throughout the facility. CA: Placed in sanitizer at correct concentration. CA: Wet wiping cloths shall be stored in sanitizer solution at the appropriate concentration between uses.
12D - washing fruits and vegetables
Regulation: 511-6-1.04(4)(g) - washing fruits & vegetables (pf)
Observed container of potatoes stored in the meat sink. COS. Items removed, rewashed, and sinks sanitized. CA: Vegetables shall only be washed in a designated sink.
16B - plumbing installed; proper backflow devices
Regulation: 511-6-1.06(2)(r) - system maintained in good repair (p, c)
Observed leaks at dish machine faucet, hand sink at server area, and hand sink at bar. CA: Plumbing systems and fixtures shall be maintained in good repair.
14A - in-use utensils: properly stored
Regulation: 511-6-1.04(4)(k) - in-use utensils, between-use storage (c)
Observed knives stored between equipment. COS. Removed. CA: In-use utensils shall be stored in a manner that prevents contamination.
14B - utensils, equipment and linens: properly stored, dried, handled
Regulation: 511-6-1.05(10)(e)1,2,4 - equipment, utensil, linens, stored 6" off floor in clean, dry location (c)
Observed bowls were stored upside right. COS. Bowls were covered. CA: Equipment and utensils shall be stored covered, inverted, or in a way to protect contamination.
17D - adequate ventilation and lighting; designated areas used
Regulation: 511-6-1.07(4)(b) - designated areas for employee activity, located to prevent contamination of food, equipment, utensils, linens, & single service articles (c)
Observed employee belongings (phones) stored with and above food and food contact surfaces. COS. Items removed. CA: Employee belongings and activities shall be in designated locations that prevent contamination.
