6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed during the course of this inspection that the facility had a pan of tail on shrimp and tail off shrimp that were being stored in the grill cooler at temps above 41 deg f. COS: Both pans were discarded. CA: Glynn Eh instructs management to have the cooler gasket repaired replaced and to ensure that all TCS food items are stored at temps of 41 deg f or below.
