Observed TCS foods cold holding in the walk-in cooler above 41F. Advised PIC all TCS foods shall cold hold at 41F or below. Advised to discard.
2-2D - adequate handwashing facilities supplied & accessible
Regulation: 511-6-1.07(3)(a) - handwashing cleanser, availability (pf)
Observed hand sink in the main kitchen with soap. Advised PIC all hand sinks shall be supplied with soap at all times. COS: soap was provided.

Observed sink in the main kitchen without paper towels. Advised PIC all hand sinks shall be provided with paper towels at all times. COS: paper towels were provided.

Observed food uncovered on the counter and at the bottom of the prep top cooler. Advised to cover.

Observed the ambient temperature of the walk-in cooler @ 47F. Advised PIC all equipment containing TCS foods shall cold hold @41F or below. Advised to repair.
